Pomegranate Granita
1/4 cup sugar
1/2 cup water
2 cups pomegranate juice
2 cups watermelon, seeded and cut into chunks
1 tablespoon lime juice
2 tablespoons fresh mint leaves, chopped
Combine sugar and water in a saucepan and bring to a boil, stirring until the sugar has thoroughly dissolved. Remove from heat and let cool.
Add pomegranate juice, watermelon chunks, and lime juice and mix with a hand blender until smooth.
Pour mixture into a chilled 9 X 13 glass or metal baking pan and place in the freezer. After 30 minutes, remove from the freezer and scrape any crystals that have formed with a fork. Stir in mint and return to the freezer. Every 30 minutes for three to four hours, remove the pan and scrape mixture with a fork, breaking up the ice crystals, and return to the freezer.
Serve in individual glasses and garnish with mint leaves.
