She is also the author of The Living Gluten-Free Answer Book: Practical Answers to 275 of Your Most Pressing Questions. Shelley Case, RD, is an international nutrition expert on celiac disease and the gluten-free diet. She lives in Regina, Saskatchewan, Canada.
Nancy Collins, PhD, RD, LDN, is a registered and licensed dietitian in private practice in south Florida. With degrees in foodservice management and human nutrition, she has a unique perspective on food as both a culinary pleasure and a healthy choice. A nationally recognized expert, Collins in executive director of RD411.com, a centralized online resource that empowers nutritionists to do their jobs more efficiently and improve public health.
David Feder, RD, is director of S/F/B Communications Group, a cooperative of experts providing communications and product consultation related to nutrition, food, health, and lifestyle to the media and industry. In addition to his previous work as an editor for several food-related publications, Feder taught food science and nutrition at the University of Texas while holding private practice as a nutrition counselor. He lives in Chicago.
Laura Pensiero, RD, is the owner of Gigi Trattoria in Rhinebeck, New York, and Gigi Market in nearby Red Hook, as well as founder and director of Chef4Life (www.chef4life.com), a nutrition and culinary consulting service. In addition to coauthoring The Strang Cancer Prevention Center Cookbook in 1998 and 2004, Pensiero recently published the book Hudson Valley Mediterranean: The Gigi Good Food Cookbook.

Jennifer E. Van Pelt, MA, CWE, CWC, is a Reading, Pennsylvania-based fitness instructor who also works as a healthcare research analyst and freelance writer. She has nearly 20 years of experience in the fitness industry and holds multiple certifications, including in aerobics, indoor cycling, mat Pilates, and yoga. She's also a certified wellness educator and consultant.
